Japanese Deep Fried Pork Cutlet: Tonkatsu

Ingredients:

  • 1 Egg
  • Flour
  • Panko Bread crumbs
  • Salt
  • Oil
  • Pork Loin

Recipe:

  1. Prepare the Pork: Tenderize pork loin with a meat mallet, then sprinkle one side with salt.
  2. Coat the Pork: Dredge the pork in flour, dip it into the egg wash, and coat thoroughly with bread crumbs.
  3. Fry: Heat oil to 200°C and deep fry the cutlets until golden brown and cooked through.
Making Tonkatsu Sauce

Ingredients:

  • 30g (1 3/4T) worcestershire
  • 10g (1 2/31) soy sauce
  • 10g (2t) sesame oil
  • 50g (3T) oyster sauce
  • 50g (2 1/3T) molasses
  • 25g (1 2/3T) dijon
  • 1g (1/2t) onion powder
  • 1g (1/2t) garlic powder
  • 10g (2t) ginger, grated/minced
  • 125g (1/2c) ketchup

Recipe:

Combine all ingredients into bowl and mix with immersion blender.
